Pine? Or hardwood?

I’ve spent the day working on dovetails. I’ve had two goes. Both with soft pine (from B&Q – uk). I can get them to fit, but very untidy.

I notice Paul demonstrates on oak? Is hard wood generally better (neater) to practice on?
